Grilled Filet Burgers

GRILLED FILET BURGERS

Qty Measure Ingredient
------------------------------------------------------------
2 lbs      ground filet mignon
2 Tbsp. shallots chopped
1 tsp garlic minced
1 Tbsp. a1 steak sauce
1 tsp onion powder
1 tsp seasoning salt
1/2 tsp kosher salt
1 Each large egg

Instructions: 
1. Start by mixing the filet with the garlic, shallots, and all the spices, mix well then add the A1 and egg, mix well  and roll into 8oz burgers and place on the grill and cook for six to eight minutes on both sides until cooked through. 
2. Serve with Roquefort and Dijon mustard on a sour dough bun.

Peppered Shrimp Salad Wrap

Peppered Shrimp Salad Wrap


1 tsp olive oil
1/2 lb shrimp medium size
1 Tbsp. garlic chopped
1 Tbsp. vermouth
1 Each juiced lemon
1 tsp black pepper
1 tsp kosher salt
2 Tbsp. red pepper julienned
2 Tbsp. greenpepper julienned
2 Tbsp. red onion  julienned
2 Tbsp. scallion chopped
1 tsp olive oil
1 Cup shredded lettuce
8 Each black olives sliced
1 Each tomato medium diced
2 Each floured tortillas

Instructions: 
1. Preheat a medium sized sauté pan over medium high heat.

2. Add the olive oil and chopped garlic. Sauté for 30 seconds, then add the vermouth black pepper, lemon juice and salt to taste.

3. Cook shrimp until pink and firm. Set aside to cool.  

4. Toss all of the salad ingredients with shrimp. Wrap in tortillas and serve.

Angel Hair Pasta with Sauteed Lobster

Angel Hair Pasta with Sauteed Lobster

1 lb dried angel hair pasta
1 3 lb. lobster; cooked
1 Tbsp. olive oil
2 Tbsp. shaved garlic
1 Cup white wine
2 Tbsp. unsalted butter (optional)
1 tsp Sugar
Kosher salt
ground black pepper


Instructions:

1.  Cook pasta according to package directions.

2.  Whitle the pasta is cooking remove lobster meat from the shell and coarsely chop.

3.  In a saute pan heat the oil over medium heat.  Add the garlic; saute for 1 minute.  Add the lobster and wine.  Bring to boiling.  Reduce heat and simmer, uncovered, for 3 minutes more.  Add the butter, if desired, and the sugar.

4.  Add the drained cooked pasta; mix well.  Season to taste with the salt and pepper.

Grilled Lemon and Mint Shrimp Recipe

grilled lemon and mint shrimp


12                 jumbo shrimp peeled deveined
1 1/2         lemons juiced
3 oz            olive oil
2tsp                 olive oil
2 tsp         garlic minced
2 bunches rockett lettuce
1 Bunch fresh mint
4 Each 2in slices  french baguette
1 Tbsp. butter unsalted
to Taste salt and cracked black pepper

Instructions: 
1. Start by mixing the fresh mint, the lemon juice, 1-teaspoon garlic, and 2oz of olive oil in a large bowl, and then add the shrimp let this sit for five minutes.

2. Then season with the salt, place the shrimp on to the grill or grill pan and cook for three minutes on each side.

3. Then one to two minutes more after on each side, while the shrimp are cooking the second time spread the butter and garlic on both side of the bread and place on the grill for two minutes each side.

4. Remove and place the shrimp onto a large round plate in a circled pattern, place the toast in the center of the shrimp one a top the other and the lettuce on top of the toast.

5. Add the 2-tea spoons olive oil on the lettuce sprinkle with a touch of salt and serve.

Grilled Atlantic Salmon with a Vegetable Medley

Hey guys, 

Here's a nice healthy recipe for you.  I hope you enjoy it!



Grilled Atlantic Salmon with a Vegetable Medley

Ingredients:

6 Tbsp. olive oil
1 Each eggplant large
1/4 Cup      red and orange bell pepper 1/2 inch
1/4 Cup          green and yellow zuchinni diced
1/4 Cup        red onion diced
1 Cup          cherry tomatoes halved
1 lb          canned plum tomatoes drained
    kosher salt
black pepper
2 Tbsp. garlic chopped
2 Tbsp. shallot chopped
3 Tbsp. butter unsalted
2 Tbsp. Capers
2 Tbsp. parsely chopped
2 Tbsp. lemon juice
2 8  oz salmon filets or four 4oz pieces
4 oz          Arugula

Instructions: 

1. In a deep frying pan heat 2 tablespoons of the olive oil over medium heat. Add eggplant, bell pepper, zucchini, and onion; sauté until soft. Add cherry tomatoes and let cook for 1 minute. Add canned tomatoes and mix well. Add 2 tablespoons of the olive oil, a pinch of salt, and a pinch of black pepper.

2. Add the garlic and shallot; mix well and let simmer for 2 minutes. Stir in the butter, capers, parsley, and lemon juice; mix well and let cook until all vegetables are tender but not mushy.

3. In a grill pan heat the remaining 2 tablespoons olive oil over medium heat. Season the salmon with salt and black pepper. Grill salmon for 4 minutes per side or until firm but moist and fish starts to separate when you press down on it.

4. To serve, scoop vegetables onto a large serving plate and place salmon on top. Place arugula on top of salmon. Drizzle with additional olive oil and season to taste with salt and black pepper.

PARMESAN AND CHEDDAR CHEESE GRITS

Everyone asks me for recipes, so I thought I throw one of my staples at you. This one is from my book Dining In and goes with almost anything. Enjoy!  

Ingredients:  
4 c. water 
1/2 tsp. salt 
1 cup uncooked fine or medium hominy grits 
1/2 cup shredded cheddar cheese 
1/2 cup shredded parmesan cheese 
1 tbsp. unsalted butter
Ground black pepper  


1. In a small saucepan bring the water and salt to a boil. Whiskk in the grits and continue to whisk for about 1 minute. When the mixture returns to boiling, reduce heat to lw. Cook for 10-15 minutes or until creamy and smooth, stirring frequently. 

2. Remove from heat, stir in cheeses, butter and pepper to taste.

Today is the big day!  I'm up getting ready and I have to say, I'm really excited.  It is such a great honor to be recognized by the NAACP, and I wish I could express how good it feels.

It's a Good year!

Hey guys,
